Pink Gelatin Trick

A simple and low-calorie gelatin-based dessert designed to curb cravings and promote a sense of fullness.

Ingredients

Scale
  • 1 tablespoon flavored gelatin powder (strawberry or raspberry recommended)
  • 1 tablespoon unflavored gelatin or collagen powder (optional)
  • 1 cup cold water
  • 1 teaspoon fresh lemon or lime juice (optional)
  • Sweetener to taste (honey, stevia, or erythritol)
  • Fresh berries for garnish (optional)

Instructions

  1. Measure and bloom the gelatin: Sprinkle one tablespoon of unflavored gelatin over 1/4 cup of cold water in a small bowl and let sit for 3 to 5 minutes.
  2. Heat the flavored gelatin liquid: In a small saucepan, warm 3/4 cup of hot water until steaming and whisk in the flavored gelatin powder until completely dissolved.
  3. Combine and add extras: Stir the bloomed unflavored gelatin into the hot flavored mix until fully melted, then add any collagen powder, lemon juice, or sweetener and taste.
  4. Add cold water: Pour in 1 cup of cold water or iced herbal tea to lower the temperature and create a refreshing mouthfeel.
  5. Pour into molds and chill: Transfer the mixture to a shallow dish or individual molds and refrigerate uncovered for 1.5 to 3 hours until firm.
  6. Serve and store: Once set, cut into cubes or scoop with a spoon, serve chilled, and store leftovers covered in the refrigerator for up to 4-5 days.
