Ingredients

  • 1 packet sugar-free gelatin
  • 1 cup boiling water
  • 1 cup cold water or unsweetened coconut water
  • Fresh fruit or vegetables (like cucumber), chopped
  • Optional sweeteners (like Stevia or Monk Fruit)
  • Protein powder (optional)

Instructions

  1. In a mixing bowl, combine one cup of boiling water with one packet of sugar-free gelatin. Stir until fully dissolved.
  2. Mix in another cup of cold water or unsweetened coconut water.
  3. Gently fold in chopped pieces of fresh fruit or grated vegetables.
  4. Pour the mixture into molds or a rectangular dish.
  5. Chill in the refrigerator for at least 240 minutes until fully set.
  6. Once set, remove from molds and serve chilled.

Notes

Store leftovers in an airtight container in the fridge for up to a week.
