Bariatric Jello Fluff

A light and creamy dessert made with sugar-free gelatin and low-fat yogurt, perfect for those aiming to slim down or post-bariatric surgery.

Ingredients

  • 1 packet sugar-free gelatin mix (flavor of choice)
  • 1/2 cup hot water
  • 1/2 cup cold water or chilled sparkling water
  • 3/4 cup low-fat Greek yogurt or non-dairy yogurt
  • 1/2 cup light whipped topping or whipped aquafaba
  • Optional: unflavored protein powder
  • Optional: fresh berries or sugar-free fruit preserves

Instructions

  1. Dissolve the gelatin in 1/2 cup hot water until completely dissolved, about 1 to 2 minutes.
  2. Add 1/2 cup cold water or chilled sparkling water to the dissolved gelatin.
  3. Fold in 3/4 cup of low-fat Greek yogurt until smooth.
  4. Chill the mixture for 15 to 20 minutes until it starts to thicken.
  5. Whip in 1/2 cup of light whipped topping until the mixture holds soft peaks.
  6. Portion into ramekins or cups and refrigerate for at least 30 minutes.
  7. Serve topped with fresh berries or sugar-free zest.

Notes

Can be made up to 48 hours in advance and stored in the refrigerator.
